Before you order your wedding cake you need to know a few things about your wedding.  I will elaborate on these things in the paragraphs below. 




  


One of the first things we ask when someone calls to inquire about a wedding cake is "When is the wedding?".  Wether it be with our bakery or any bakery this is important because most bakeries have a limit to what they can easily do in a weekend.  That is the case for us.  We do limit the number of wedding cakes we handle for a particular date so don't be surprised when you are asked that question right up front. 

The next question is one that is often difficult to answer. How many guests do you expect?  We often get the response, "We are sending out 200 invitations".  So then we ask "Is that 200 guests or potentially 400 guests (if each brings a companion).  It is important to at least have an educated guess of what you may have in attendance.  We do allow you to adjust your order up until 3 weeks before the wedding for whatever your response cards tell you but you should go through your list and guess who may come and who may not based on your knowledge of the guests.  This is always guess work to start with but will give you a starting point.  Since we recommend you start the ordering process 3-6 months at least before your wedding this will always be a guessing game in the beginning.  Generally speaking you can assume you will have anywhere between 1/2-2/3 of your guest list attend and possibly even 3/4 if most of them are local it is really a good idea to send response cards with your invitations.  You will need this information for your caterer, for table counts, seating if you have to rent chairs and possibly other details as well

How much food are you serving?  Are you serving a full sit down meal or a lighter fare?  This has a big impact on the size of your cake.  Is it a sit down dinner and is the cake is going to be served to the guests at their seats?  If they will be served you should make sure there is enough cake for every guest.  If they will be getting up to get their own as in a buffet it is possible some may not have cake.  Are there other desserts?  Often there are chocolate fountains or a dessert table.  If cake and punch are all that is being served you want to make sure there is enough cake for everyone.  So you see there are decisions to be made here about how the amount of food impacts the size of the cake. 

Time of Day is another factor that enters into the cake size equation.  Afternoon weddings may not need as much cake as evening ones.  This is a minor factor but does have some impact.

Will Alchohol be served? If it just a toast it has almost no impact but if beer, wine or mixed drinks will be served you may be able to cut back some on the size of your cake.  Most people, if they are drinking more than a soft drink, will not mix sweets with alchohol. 

Will there be a Groom's cake and how big will it be?  If you are having a Groom's cake it is often possible to add the two cakes together to determine the number of servings you will have in total.  This does vary somewhat from wedding to wedding but most of the time a guest may have a piece of one or the other.  A few people may have one of each but this is somewhat offset by those who do not have any at all.  Sometimes a Groom's cake will be served at the rehearsal dinner so in that case it has no impact upon the size of the wedding cake. 














The "LOOK" you want! 
This is one detail that really can make a difference when a bride has a certain "LOOK" in mind for her cake.  Very often we have brides come in with a pre-set idea of the cake they want.  Sometimes they come in with a picture in hand that they found in a bridal magazine or elsewhere on the internet.  If this picture has a particular look but the couples wedding is considerably smaller than the wedding cake in the picture would serve we may have to make adjustments to accomodate the desired look.  We can often adjust the size of the cake to some degree and still achieve the same look but sometimes it is not possible.  The picture of the cake just above on the right is one such example.  This one has 4 tiers in the center which can serve anywhere from 146 to 200 or more depending on the size of the tiers and then when you add in the 5 round cakes at the base you could be looking at another 80-150 more serving depending on wether 6" rounds or 8" rounds are used.  If you are only expecting 150 people at the most this would be more than twice as much cake as you would need.  In a case like this we would suggest dummy tiers be used for the bottom.  Your guests would never know it wasn't real cake unless you tell them.  It would be iced in the same icing as the rest of the cake but it would not be cake.  This would also cut down somewhat on the cost.  You would still have to pay for the icing and the time needed to decorate it but it would cost somewhat less and you would not have all that leftover cake to deal with. 
     If your are wishing to make your cake look bigger without a lot of extra cake you might consider a cake stand.  We have 3 different silver cake stands available, an 18" square, 18" round and a 22" round.  These elevate the cake and enhance their appearance.  We also have the "I Do" stand and "Floating on air" stands pictured on the "Unusual set-up" page of this website and 5 different Fountain cake stands shown on the "Fountain wedding cake" page of this website.  All will make a small cake look bigger and enhance any setting!

Flavors: The taste of your wedding cake should be just as important to you as the look. You can either have your cake all be the same flavor or you can have each tier be a different flavor.  We also have fillings available for between the layers if you wish.
    






Cakes are our specialty.  Making them taste good is just as important to us as making them beautiful!  We have built up a reputation over the last 23 years of making people happy.  Almost anywhere you go in the area, if you ask for a referral on who you should choose to do your cake you are likely to hear our name come up.  All of our cakes are made from scratch in our own "on-site" bakery.  Ask that of the local super markets.  None of them are baking cakes "in-store" any more, they all come in from somewhere else.  You can smell the difference when you walk in our door!

Cake Flavors
The list at right is all of the cake flavors we normally offer.  The ones in black are what we consider our basic flavors that are available on a regular basis.  Basic flavors are all the same price in a wedding cake.  The flavors listed in blue are considered premium flavors.  Those 3 flavors are also available on a regular basis but do cost a bit more.  Flavors listed in red are by special order only and are consider "Super Premium" flavors
Fillings
The fillings listed at right are available on a regular basis.  All would cost a bit more than basic which is with buttercream icing as a filling.

Icings
The most common icing we do is buttercream icing.  That is the icing our base price is considered with.  All other icings other than Chocolate would incur additional cost with rolled fondant icing being the most costly.  All are available on a regular basis.
At our bakery we suggest that appointments be scheduled to discuss wedding cakes.  At the time of the appointment you will be given a sample plate that contains either all or most of our available flavors for you to try.  We do our best to include as many flavors as we can.  If you know there is a particular flavor you are interested in you should request that at the time you make the appointment.  You would also have the opportunity to look at all of our photo albums (and there are several) full of pictures or you can bring a picture of something you are already interested in for us to consider.  You will be meeting with Myra Jean personally and will have all your questions answered.  We strongly suggest you visit us at least 3-6 months in advance of your wedding.  Spring months (March-June) fill up quickly with wedding cake bookings so early fall is the smart time to plan for those, whenever possible.  Don't let YOUR wedding be the one we have to turn down!

· When your wedding will be (date).
· Approximate number of invited guests, (not number of invitations)
· How much food you plan to serve, (big meal or lighter fare).
· Time of day reception will take place.
· Will alchohol be served?
· Are you planning to have a Groom's cake and how big will it be?
· Do you already have a certain "LOOK" in mind for the wedding cake?
If you need a lot of servings this is one way to add addition servings and keep them all part of the wedding cake.  This would be called "satellite cakes"
We get a lot of requests for this set-up when folks have no idea this could serve 300-400 people.  Dummies could be used to take the place of some of the tiers for smaller weddings. 
The entire bottom of this cake was made with dummies for a wedding of about 140 people.
